Storia e curiosità
In 1986, almost as a joke, bewitched by the charm of the Sibillini
and our passion for hang gliding, we devoted ourselves to hospitality.
Fortunately, we found an equal passion for this work, rediscovering, and at
times being deeply moved by the quality and flavours of our agro-silvo-pastoral
tradition that re-evokes ancient times through the tastes upon our palates.

Canaloni del Vettore (Available all year)
Tortiglioni with fresh ricotta, fresh mushrooms, lentils and pepper. This
vegetarian dish combines all the souls of this territory: wild food in nature,
the shepherding tradition, and traditional crops.

The products used...
We use ricotta and lentils IGP.
...And their producers
The cheese is produced by the farm Perla Vincenzo. IGP lentils
are from the farm of Pasqua Armando.
Place of production
Both farms are located on the Plains of Castelluccio.
Production Method
These are natural, organic products.
These products help biodiversity
The traditional agricultural practice used for growing lentils
in this area is done without the use of herbicides, pesticides and chemical
fertilizers. This style of farming encourages the presence of a wide variety of
plant species, which generate the spectacular colourful flowers, which the
Plains of Castelluccio are globally famous for. A large variety of animal
species are greatly assisted by these conditions. In particular, the presence of
many species of insects are necessary for other animal species, especially
birds, which feed upon them. The most significant species of this environment is
the partridge, a galliforme that was once widespread but whose particular type,
the ‘italiaca’, has now virtually disappeared. Typically the partridge lives in
environments where traditional agriculture is practiced and it has colonized the
Plains of Castelluccio, although this land is located at a higher altitude than
is usual for the species. Part of the Plains of Castelluccio is reserved for
grazing mostly for sheep. This contributes to the maintenance of secondary
grasslands and the wide variety of plant species that characterize them.
