Storia e curiosità

Altino is the highest village in the district of Montemonaco, surrounded by chestnut and beech trees, overlooked by the mountains Monte Altino Its elevated position offers the opportunity to enjoy spectacular views across the valley to the sunny meadows below where cattle graze during the summer months. The village is located upon the Sibillini Great Circular Hiking Route, the most important hiking trail that covers over 120 km within the Monti Sibillini National Park passing through almost all its districts.

Wild Boar with Mela Rosa (pink apples) from the Sibillini (Available in the fall, winter and spring)
This wild boar dish can be enjoyed all year round at the Rifugio Altino, with the exception of the summer months when we offer a version of the dish with peaches. The boar is a wild animal that lives in the Monti Sibillini National Park and is the staple ingredient of this fine dish. Its taste is balanced by the sugar of the fruit, creating a succulent and exquisite flavour enjoyed by even the most discerning clients. It is undoubtedly one of the dishes that made our restaurant famous.

Wild boar with peaches (Available in summer) Boar with peaches is a dish from the Rifugio Altino that you can enjoy during the summer. The flavour of the boar is paired with a sweet and intense taste of peach, creating a dazzling mixture of sensations.

The hunting area for the boar is within Montemonaco. The pink apple has been grown for a long time by the family who operate the rifugio.

These products help biodiversity

The wild boar had disappeared from the Apennines in Umbria and the Marche many centuries ago. Since the late 1970s the presence of this animal has increased significantly mainly due to restocking for hunting. In recent years the wild boar population has reached levels that sometimes create an ecological imbalance. This led the Park to take action to restrict the number of boars through selective sampling. This has important implications for management intervention in environmental protection, and the controlled cull also reduces damage caused to agriculture while representing an added value for local cuisine.
