The ‘Sibillini Menu’ is a ‘gastronomic itinerary’ designed to allow one to
discover the tastes of the territory. Born from the desire to forge a close
link between food producers and restaurants in the Park, the ‘Sibillini Menu’
offers a specially created dish from each participating restaurant, which is
made entirely from ingredients produced in this mountainous land.
The menu, which is found in each restaurant, contains a description of the
unique dish, the ingredients with which it is made, the location of the food
producers, their method of production and how their food production activity
assists the conservation of biodiversity. On the menu is a list of all the
participating restaurants, their locations and the special dish they offer,
so one can choose one’s own eating and walking literary.
Strengthening the bond between authentic tastes of the mountains and local
restaurants is an important objective. There is a great joy in discovering
the taste of this extraordinary landscape, which arrives on the table thanks
to man's careful work and attention given to maintaining the natural equilibrium.
A direct supply relationship makes the best use of local knowledge and promotes
a strong community, which has characterized life in the remote villages of
our mountains since ancient times. Food that is produced in this sustainable
manner offers health benefits to the environment and to the consumer simultaneously
Italy is the European country with the largest variety of species and 30% of
life forms in our continent are focused on our little peninsula. The protected
areas in Italy were created with the intent of ensuring biodiversity through
the preservation of plant and animal species in the environments where they
live and reproduce. Biodiversity, understood as the diversity of species
and living organisms adapted to this environment, is also reflected in the
richness of the food offered by the territory. The heritage crop varieties
and indigenous animals in this area are the fruit of a long adaptation to the
changing characteristics of the environment. Hence it is essential that they
should not be lost, and indeed, are protected.
