Storia e curiosità
The Quercia Della Memoria, or ‘The Oak of Memory’ is not only a restaurant
but also an integrated part of a multifunctional organic farm with an educational
experience centre and a social interaction point. Forging a direct link from the
fields to the table, the restaurant also offers tasting sessions as well as
seating for 25 people. This is a chance to rediscover the cuisine from Central
Italy, both of the past and future, with organic, seasonal ingredients, mostly
produced on the farm. Vegetarian menus are always available as are special menus
for children.

Polentone al forno con ragù maceratese
(Available in the fall and winter)
This is a baked polenta with meat sauce in the style of Macerata. The polenta is
made from ‘ottofile’ corn flour (an ancient variety of corn within the territory
of San Ginesio) and stone-ground at the mill on the farm. The polenta is topped
with a sauce of mixed meats (veal, lamb - ‘castrated’, local pork) and baked with
pecorino cheese from the Sibillini.
Tagliatelle with Primrose (Available in spring and summer)
This pasta dish is made with stone-ground wholemeal wheat and leaves of primroses
(Primula vulgaris) collected in the wild, mixed with rose petals, cream, sunflower
seeds and carrots.

The products used...
The raw materials come from the organic farm that forms part of
the restaurant. The ‘ottofile’ corn and tomatoes for the sauce are grown on this
farm. The various meat comes from animals bred in the territory; the Marchigiana
veal and special Marche pig is raised on a farm within the Park, while the sheep
are raised on summer pastures in the Park. The pigs are raised in a semi-wild
state, fed with the organic farm crops and also with organic vegetable waste
from the kitchen. Depending on the year, in relation to the crop rotation,
the wheat can be produced on the farm. The primroses are collected in the wild.

Place of production

located in the municipality of San Ginesio and in area of Gualdo (production
locations vary depending on the crop rotation). The farm produces the flours
with its own stone mill. The cattle and pigs are raised in the municipality of
San Ginesio. The sheep (lamb and mutton) and the sheep cheese come from the area
of Bolognola in the Park, where the sheep graze in the mountains.
These products help biodiversity
Extensive rearing of sheep and grazing areas for sheep exist
within the Park. This contributes to the maintenance of secondary grasslands
where there are a wide variety of plant species, including an abundance of
orchids (in the Park there are more than 30 species). In addition the grasslands
also represent the ideal habitat for many species of birds to nest, such as the
tawny pipit, the red-backed shrike and the skylark. For these reasons these
habitats are considered to be of priority interest by the European Union. The
preservation of these precious and fragile environments depends on the maintenance
and management of these pasture areas.
