Storia e curiosità
Situated in the countryside against the backdrop of the Sibillini
Mountains, the Colle Verde is a place of profound tranquillity, a few kilometres
away from the shrine dell'Ambro,
near the famous gorge the Infernaccio, the Hermitage of San Leonardo, and the
starting point for excursions to Mount Vettore, the Lago di Pilato and the cave
of the Sibilla.
At this ideal location one can also enjoy traditional dishes.

This is a form of pasta called ‘half sleeves’ which is cooked al dente, and then
sauté in a pan with cooked bacon and pink apples. Then a final touch of saffron
is added.

These products help biodiversity
When one considers biodiversity, normally we think of the natural
environment but biodiversity also includes the variety of cultivated plants and
farm animal species.
Through a simple and logical connection all these factors combine to create
biodiversity of food. Local varieties of agricultural products or livestock,
which are the result of centuries of evolution and work, have been able to adapt
to the morphological, climatic and environmental conditions of this area,
acquiring unique organoleptic and nutritional characteristics. That is why it is
essential to preserve and indeed promote their conservation.
