Storia e curiosità

Speaking of the food in Norcia is to summon up ancient traditions, characteristic recipes with imagination and taste, based on the black truffle, lentils of Castelluccio, porcini mushrooms, and meats on the grill. All this we offer in our medium sized restaurant that has been managed by the Valli family for over 50 years with competence, professionalism, courtesy, and without ever neglecting the quality and authenticity of products. There is also an impressive wine list to satisfy even the most discerning palates. The Taverna is located in the historic centre of Norcia, close to the Theatre of Norcia.

These products help biodiversity

Organic farming represents an added value to both the product and the environment. Each step of the process in organic production is designed to maintain and increase the diversity of plants and animals, whose presence helps to maintain a balanced agro-ecosystem. These cultivation methods create good soil fertility, obtained with the help of microorganisms instead of chemical fertilizers. Simultaneously this manner of cultivation guarantees protection of the hedges and rows of trees near the fields. This practice is a factor of great ecological importance because these buffer zones provide shelter and food for a wide range of living organisms. Buffer zones also perform important tasks such as protecting crops from environmental pollution and protecting the soil from erosion. They also act as windbreaks, as well as being typical visual element of the rural landscape.
