ROSA APPLES OF MONTI SIBILLINI

Rosa apples are an ancient species that have always been cultivated on the Monti Sibillini. Very small, irregular, and slightly squashed in appearance,
with a very short stem...of a greenish color with hints of pink and deep red. The flesh is both acidic and sugary, and intensely fragrant.
The cultivation of these apples has been almost completely discontinued: a few scattered trees survived, and only in the last few years
have they begun to be cultivated again, though in very small quantities. In the past they were much prized for their keeping qualities:
once picked they keep perfectly until April, and in fact they can be said to improve, because the hard, compact flesh becomes softer over time.
