PRIZED BLACK TRUFFLE

Commonly referred to as “Black Truffle from Norcia or Spoleto,” the Tuber melanosporum Vittadini is distinguishable from other types (Tuber brumale Vittadini or black winter truffle, for example, or Tuber aestivum Vittadini, black summer truffle or “Scorzone”) by its black, wrinkled, warty skin and white-veined purplish-black flesh. The size can range from that of a hazelnut to that of an orange, and it has a pleasant, delicate fragrance. It can be found near oak, hornbeam, hazelnut, and holm-oak trees, between the 1st of December and 15th of March. Principally marketed in Norcia, where the ascolano area is famous for Amandola truffles. In the woods of the Park the white truffle can also be found (rare and precious, gathered between October and December) as well as the “summer Scorzone” (between June and August).
