Located on the ridge from which it takes its name, within the municipality of Ussita, at the heart of the Monti Sibillini National Park, the Rifugio Fargno is a favourite destination for hikers, bikers, motorcyclists and all mountain lovers in general. The breath-taking view, which offers some of the most splendid scenery including Pizzo Berro, Forca della Cervara, Val di Panico, and the majestic north face of Monte Bove, is a great gift that awaits all those who choose to visit us.

Pennette is a handcrafted pasta cooked in mountain spring water and sautéed with a pesto of wild herbs from the Park.

Place of production  

The pasta is made by hand in the Park, in Montefortino. The water flows just a few meters from the shelter. It comes from the spring of Pizzo Tre Vescovi (1900 m.) and analytical tests confirm its purity and valuable characteristics. The herbs come from Pievebovigliana

Production Method  

The pasta is made with durum wheat from a heritage grain called ‘Capelli’ and farmed on land located in the Sibillini. The company is certified with the brand QM Marche ‘Quality Marche’. The herbs are collected in the municipality of Pievebovigliana, by Terre della Sibilla, which was started in 2001 and focuses on the recovery of abandoned land and organic crops.

These products help biodiversity

Each step of the process leading to organic production is designed to maintain and increase the diversity of plants and animals and create an equilibrium, which helps maintain a balanced agro-ecosystem. This manner of cultivation relies on crop rotations and green manure (mulching) to ensure soil fertility, obtained by the helpful presence of microorganisms rather than synthetic chemical fertilizers. As much as possible indigenous plant species are grown and green borders of hedges and rows of trees near the fields are maintained. The practice of maintaining buffer strip borders is a factor of great ecological importance. Hedges provide shelter and food for a wide range of living organisms. These areas also perform important tasks such as protecting crops from environmental pollution and restricting soil erosion. Buffer strips also act as windbreaks and constitute a typical element of the landscape, adding to its aesthetic value.
